Sabudana Chop

SABUDANA  (Tapioca Pearls)  CHOP

We bongs are so fond of Chops, be it veg or non-veg. So I have tried this Vegetable Sago Pearls Chop. As it's Maha- Shivratri, so it's one of the best snacks i could have thought of.


INGREDIENTS

1. Sabudana (Sago Pealrs)/ (Tapioca pearls) - 1 cup Soaked for 4 hours.
2. Mashed Paneer- 1 cup
3. Sauf Powder (Fennel Powder) - 1 tsp
4. Bhuna Jeera Powder (Roasted Cumin Powder) - 1 tsp
5. Tamarind paste - 1/2 tsp
6. Chopped Green Chillis - 4-5 (depends on the, kind of spice you would like to have)
7. Chopped Coriander Leaves - 1 1/2 tsp
8. Salt to Taste
9. Oil for cooking
10. Rice Flour - for coating

PREPARATION 

In a bowl, take Sago, Potato, sauf powder, Bhuna Jeera powder, Tamarind paste, Green chillies, and Chopped Coriander, and mix them properly. Now make chop shaped with gentle hands. Now roll these on the rice floor. In a pan heat oil and deep fry these chops in it.

Well, it's ready to serve.

Banana & Cashew Thandai

INGREDIENTS -

Milk- 1 1/2 Cup
Banana - 1
Cashew- 5-6 soaked
Grated Coconut - 1 1/2 tsp
Ice - 2-3 Cubes
Sugar - 1 1/2 tsp (You may also use sugar free)

PREPARATION-

Blend Milk, Banana, Soaked Cashews, Ice cubes and Sugar together.  Now Serve it in a traditional Glass and garnish it with grated coconut.

Choco Cream Kulfi

 - "CHOCO CREAM KULFI"- Kulfi My Style


KULFI - INGREDIENTS

1. Milk - 1/2 Litre
2.Condensed Milk - Less than 1/2 Small Tea Cup
  (I have not added sugar here cause Condensed Milk in itself acts like a sweetener)
3. Vanilla Essence - 1 drop

PREPARATION -

Boil the milk on a low flame until it becomes little thick. Now add the vanilla essence & condensed milk (you may also skip the condensed milk if the milk has thicken enough, but then add sugar/ sugar free to it) . When the milk becomes quiet thick let it cool on room temperature for couple of mins. Now pour it in a Kulfi Mould and let it chill in deep refrigerator for several hours (keeping it overnight will be fab. As you crave for it till it actually melts in your mouth ;) ;) )

CHOCOLATE SAUCE - INGREDIENTS

1. One small bite of any chocolate (I had 5 Star in my fridge so used it)
2. Water - less than 1/2 cup
3. Red Wine - 1 tsp
4. Coffee - less than 1/2 tsp (a pinch or two would even work, just for the flavor)
5. Milk - 3 Tbsp

PREPARATION-

In a pan put the chocolate, add water and let it liquify. Now add Red Wine, Coffee and let it cook for 5 secs, and then add milk and let it cook for 5 to 10 secs more on a medium high flame. Pour it in a small container and let it cool in room temperature for 5-6 mins. Now keep this sauce in the fridge and let it cool.

CHOCO - CREAM KULFI  PREPARATION-

So, now, we have the Kulfi, We have the Cream and the Chocolate sauce of course. Place the Kulfi in a serving plate and top it with cream and chocolate sauce...

Phewww...So do you really want to wait to have it???  :) :)

Honey Chilli Potato

Thank you people for so much of love for this recipe... It can be made in various ways...Below is my way of cooking a quick Honey Chilli Potato... So.. here you go with the recipe below ----



HONEY - CHILLI POTATO






INGREDIENTS

1. Ready-made potato wedges/ fingers (eg. Yummies or any other of ur choice)
2. Honey - 2 tsp
3. Red Chilli Paste - 1 1/2 tsp
4. Red Chilli Sauce - 2 tsp


5. Red Chilli Flakes
6. Ginger Chopped - 1/2 tsp
7. Garlic Chopped - 5 cloves
8. Oil
9. Salt to taste
10. Water - 1 cup
11. Parsley - a pinch (Well I added coriander to my dish, cause when I opened my kitchen shelf I was sad to c my Parsley bottle empty :( :( mmmm  )

Serves - 2

PREPARATION 


Deep fry the potato wedges/ fingers and keep them aside. Add salt if required. Now in the same wok/ pan add little more oil and add chopped ginger, chopped garlic and saute for few secs on a low flame. Now add Red chilli paste, Red chilli sauce, Honey and stir for few secs and add water. Now add the potato wedges/ finger and toss it well to coat it with the sauce. Add Chilli flakes(according to taste) and garnish it with Parsley / Coriander chopped and have it HOT!

Gosht Yakhani


KASHMIRI DELICACY-  GOSHT YAKHANI

INGREDIENTS -

1. Meat (Gosht) - 1/2 kg
2. Curd - 400 gms
3. Sauf Powder - 3 tsp
4. Sauth Powder - 1 tsp
5. Kali Mirch Powder - less than 1/2 tsp
6. Cloves - 5 in nos. grounded
7. Cinnamon Stick - 1 Medium stick broken into 2 ( you may also use Cinnamon powder less than 1/2 tsp)
8. Badi Elaichi - 1
9. Choti Elaichi - 4 in nos. Grounded
10. Javitri -  1 Medium size grounded 
11. Hing - A pinch
12. White Sabut Jeera - 1/2 tsp
13. Bay Leaf- 1 big crushed
14. Water - Accordingly
15. Salt to taste
16. Oil for cooking- 1 Big  Serving spoon

PREPARATION -

Heat 1/2 serving spoon oil in a cooker. Now add Hing, Bay Leaves, Cloves, Choti Elaichi, Badi Elaichi, Javitri, Cinnamon Stick (If you are using powdered one don't add in it) & White jeera and fry for 5 secs on a low flame. Add Mutton (Gosht) pieces and fry for 10 mins. on a low flame until it turns golden brown, with the lid on. Now add one  medium tea cup of water in it. Cover the lid and let it cook till 2-3 whistles( cook it on a low flame).

Meanwhile, in a bowl take curd, add sauf powder, saunth powder (have to be very careful with the quantity, or else saunth will ruin the taste) , kali mirch powder, salt (Cinnamon if you have powdered it), 1 tea cup water and make a smooth batter.

Meat is cooked. Open the lid and drain the water with help of a strainer (Use a big strainer so that Meat pcs. and the garam masalas are secured in that). Now in the same pan heat 1/2 serving spoon of oil and add the curd mixture while gently stirring it so that it doesn't form lumps. Keep on stirring it for few secs. on a low flame, until it comes to boil. Now add the Meat pieces along with the sabut garam masalas and let it cook on a low flame with the lid on, for 30-45 mins.

Oh! you still wana wait to have this? Well I am already famished :D

Best Served With-  Kashmiri Pulao, Gosht Biryani or even simple boiled rice.

EGG LESS CARAMEL CUSTARD 





 INGREDIENTS

1.  Sugar - For Caramelizing
2.  Custard Powder - 4 tbsp
3.  Powdered Sugar (2 tsp)/ Sugar Free (4 tsp)
4.  Milk - 4 cups
5. Vanilla Essence- 1/2 tsp

Serves 2

PREPARATION 

Caramel - In a non stick pan add Sugar and cook it till its golden brown and liquifies. Now pour this caramel in a mold and let it set for 10 mins.

Custard - Mix the custard powder in cold milk finely. In a pan, boil milk, now add vanilla essence and the custard powder and keep on stirring so as to avoid lumps. When the mixture thickens a bit pour it in the same mold  in which yo have set the caramel. Now refrigerate it for 4-5 hrs.

Serving - While serving, loosen the custard from the side of the mold and on a plate turn it upside down and,,,, Well you know you are already craving for it ;) ;)

Oats Kheer

Healthy  Breakfast - " Oats Kheer" (Bong Style)

INGREDIENTS

1. Oats - 2 tsp
2. Milk - Cup
3. Khejur Gur - one bite (Bong Gur, available in Bengali Sweet Shops)
4. Dry grated coconut - 1 tsp
5. Grated/ Chopped Almonds or any dry fruit u love 

Serves 1

PREPARATION

In a pan boil Milk and keep on stirring for 2 mins. Now add Oats, Gur and Grated Coconut to it and stir for 3 mins, untill it becomes little thick. Turn off the gas, and let it cool for couple of mins. Now pour it in the serving bowl and top it with Almonds or any other dry fruit or fruit which you love.

Choco Cocktail

INGREDIENTS 

1. Chocolate Solid
2. Chocolate Syrup /Melted Chocolate (chilled)
3. Cream (3 tbsp)
4. Ice Cubes
5. Powdered Sugar / Sugar free (to taste)
6. Milk- 1 1/2 cup
7. Red Wine - 3 tbsp
8. Coco Powder (1/2 tsp)

Serves 2

PREPARATION

Blend Coco powder, Milk, Sugar, and Ice in a blender.  In a bowl mix cream, chocolate syrup and red wine. Now pour this mixture at the base of a glass and let it settle down. Now pour the Blended mixture in it. Add grated chocolate and a piece  of chocolate and serve it chilled...

Home-Made Whipped Cream

Home-Made ---- WHIPPED CREAM (Yummie Mummie)


Generally, we get whipped cream easily available at our nearest market place, so we do not wish to take the pains to make it at home.

Well, My next recipe bounded me to make a fresh home-made whipped cream.. So here I am with the recipe below-

  INGREDIENTS 

1. Thick Cream - 1 Cup
2. Powdered Sugar - 1 tbsp Powdered Sugar (Add more if you want it sweeter)
3. Hand Blender/ Whisk/ Fork
4. Vanilla Extract (Optional) - less than 1/2 a tsp (small)

Serves - As per your usage


PREPARATION-

Pour the Cream , Vanilla Extract & the Sugar Powder (I generally prefer to add sugar powder in the first step of whisking) in a deep round bowl(make sure the cream and the bowl is chilled). Now start whisking/ blending/ forking until the cream turns into stiff peak. This will take several minutes (with a whisk/ fork). With a hand blender it's quick.
I prefer whisking it with a whisk. WHY? might be, I feel more satisfied after the labor put into making a fine whipped cream.. :P :P
Well, this actually checks your perseverance ;) & if you are a cooking maniac you will not stop in between & will achieve your mission :D :D

You may procure it for couple of days, in the refrigerator . However, fresh cream is always preferred. So now if you have sudden guests at home you don't have to rush to the shop to get the cream. Jus' make it fresh at home anytime, and make delicious desserts with it... Cold Coffee with Whipped Cream & caramel.... mmmmmm do we really need to go to STARBUCKS any more???

Bengali Delicacy- Khejur Gurer Malpua

             INGREDIENTS

         1.      Wheat Flour (Maida) (1 cup)
2.      Rice Powder (1/2 cup)
3.      Khejur Gur (1/2 dice )
4.      Banana (1)
5.      Dry grated Coconut
6.      Dry Fruits (Kismis, Kaju, Pista, Badam Kesar (opt))
7.      Water
8.      Refined / Olive Oil for cooking



           PREPARATION



In a bowl mix Maida, Rice powder, Banana, Grated Coconut and mash them together.  Meanwhile, boil water in a pan and melt the Gur. When the mixture is mashed finely and Gur is melted add them together and make a thick batter.
Add all the dry fruits in the batter.
Now heat oil in a pan and on a medium low flame with the help of a scoop/spoon or cone or any other shaper pour the batter in equal portions and fry for few secs., till it is cooked (it should not stick) and golden brown. 

Well, there you go… When you crave for sweet at midnight and have nothing in the fridge, this one can stop your craving. It’s quick & easy.… Best served with Rabri, Chana r Gurer Payesh (Chena Kheer) or you may try it with Vanilla Ice cream too!! :)
