PREPARATION –

Slightly slit the Boiled Eggs & marinate them with Cornflour, Red Chili Sauce (1/2 tsp), Ginger Garlic Paste (1/2 tsp) and salt to taste and keep it aside for 10 mins.

Heat 4 tsp of oil in a pan, (I use Olive, you may use whatever oil you cook your food with, but not Mustard) and fry the marinated Eggs and keep it aside.

SAUCE PREPARATION –

In the same pan and oil, add chopped ginger & garlic and saute for few secs. (On a med high flame)& add green chili and chopped Capsicum and Onion and saute (on a low flame) for few mins. till the ingredients get cooked. In a bowl mix 2 tbsp of cornflour, 2 tsp soya sauce. Now add this mixture to the cooked ingredient in the pan, add salt to taste (remember you have added salt to the egg marinate before). Bring it to boil and add the fried Eggs and pinch of ajinomoto, saute for few secs and pour it in a bowl. Garnish it with chopped coriander leaves/ spring Onions (which need to be fried a bit before garnishing)

This was my quick Chinese Recipe with Egg (When you carve for Chinese food at night and don’t have any other option in veg or non-veg) :) :)
