Marathi Delicacy- Pav Bhaji



   Marathi Delicacy----PAV BHAJI








         INGREDIENTS

               
1.      Pav
2.      White Butter
3.      Potato (1 Big Boiled)
4.      Tomato (1 Big Chopped)
5.      Capsicum (1 Chopped)
6.      Carrot (1 Grated)
7.      Cauliflower Florets (5 Big or 7 small florets Boiled)
8.      Green Peas (Boiled)
9.      Onion (2 Chopped)
10.  Ginger Chopped
11.  Garlic Chopped
12.  Coriander Leaves chopped (For Garnishing)
13.  Green Chilies (4 Big chopped (as I don’t use Red Chilli Powder or paste, so may change the green chilly nos. accordingly))
14.  Tamarind Paste (1/2 tsp)
15.  Badam Paste (Soak the Badam(3Nos.)  for few hours and make fine paste out of it)
16.  Anardana (For Garnishing opt.)
17.  Pav Bhaji Masala
18.  Water
19.  Salt to taste
20.  Lemon (Serving)
21.  Oil to cook (2 tbsp)


    PREPARATION

Mash the boiled potatoes and peas together & keep it aside. Heat oil in a pan and on a medium low flame, add chopped garlic, ginger, green chilies, onion and saute for few mins (2-3). Now add chopped tomato, chopped capsicum and grated carrot and let them cook for few mins on a low flame with lid on. When this is cooked, add the mashed veggies, tamarind paste, salt, 1 ½ tsp Pav Bhaji masala (use one tsp if u wish to add garam masala) & Badam paste. Mix all of them upside down in the pan and cover it with the lid and let it cook for 20 mins. on a low flame. Check in between and stir once.  Add water if required. Use a masher to mash all the veggies. Your Bhaji is ready… Garnish it with chopped coriander leaves, 2 small cubes of butter and anardana(opt.)


FOR THE PAVS


     You may tawa roast the fresh soft pavs with butter. I brushed the pavs with little butter so as to keep the buttery flavor and not making them heavy and oily and heated them on tawa.
